Yes, yes, yes!! Been craving some type of “carby baked good” lately. And I know, I know, TECHNICALLY you aren’t suppose to create muffins or other baked goods on Whole30 with Whole30 ingredients, but hear me out…

My husband and I embarked on Whole30 in January and we did great with it! We decided to do it another month, however I’m starting to have some cravings now for baked goods so here it is.

These have all Whole30 compliant ingredients and are mighty tasty! Banana and coconut together brings me back to Mexico with the fresh coconut flavor! Super easy to bring on the go for a quick breakfast. And yes, they are husband approved!

What you’ll need:

  • Banana
  • Egg
  • Unsweetened apple sauce
  • Unsweetened almond milk
  • Vanilla extract
  • Coconut flour
  • Almond flour
  • Baking powder/Baking soda
  • Ground cinnamon

Coconut Banana Muffins

Ingredients

  • 2 over ripe bananas
  • 3 eggs
  • 1/2 cup unsweetened apple sauce
  • 1/4 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 1 cup coconut flour
  • 1 cup almond flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • unsweetened shredded coconut

Instructions

  1. Preheat the oven to 350 degrees and spray muffin tin with nonstick cooking spray. Set aside. 

  2. In a large bowl, mash the ripe bananas together with the back of a fork until smooth. Add in the eggs and whisk together. Add in the almond milk, apple sauce and vanilla and whisk well.

  3. In the same bowl, add in all the dry ingredients expect shredded coconut. Mix with a spoon until just combined. Do not over mix.

  4. Scoop the batter evenly into the 12 muffin tin pan and top with shredded coconut. Pop in the preheated oven and cook for about 20 minutes or until muffins are set and a toothpick comes out clean. Remove muffins from oven and let rest for about 2 minutes. 

  5. Using a butter knife, loosen the edges of each muffin and then carefully remove from pan and place on a cooling rack to cool completely. Enjoy!
