It is day 18 of Whole 30 for me and the hubs and I am doing well but certainly having a little sweet tooth craving here and there. I love dates! I know that they are suppose to be limited on whole 30, however I think they are very important to keep me on track instead of sneaking around and eating a chocolate bar 🙂

I love the fresh dates from Trader Joes. They are a great price and I keep them in the fridge for a snack when I get that sweet craving. For this recipe though, I bought organic pitted dates at the store because it was just more convenient to not have to pit a bunch of dates.

What You’ll Need:

  • Pitted Dates
  • Raw Pecans
  • Raw Cashews
  • Unsweetened shredded coconut

Easy right! Just a few ingredients. Also, you can totally switch out the nuts. If you aren’t a fan of cashews, just use pecans or you can even use raw almonds. Also delicious!

After the mixture is made, I put these into an 8×8 pan to set for a few hours and cut into bars. However you can totally roll them into balls if you prefer that as a snack!

Coconut Date Bars

Prep Time 5 minutes
Total Time 5 minutes

Ingredients

  • 1/2 cup raw cashews
  • 1/2 cup raw pecans
  • 12 pitted dates
  • 1 cup unsweetened shredded coconut
  • 1 TBSP water

Instructions

  1. Add the nuts into a food process and pulse until finely chopped.

  2. Add in the dates, breaking up (or chopping up roughly) as you go. It will blend easier. Pulse until combined. 

  3. Add in the shredded coconut and water and continue to pulse until the mixture comes together and you can easily make a ball that sticks together in your hands.

  4. Line an 8×8 pan with parchment paper and work the mixture in to an even layer in the pan. Let it set for about 4 hours and cut into bars! *You can also roll this mixture into balls if you prefer.
