It’s officially sweet summertime!! On the menu this summer is cookouts, vacations, cocktails, beach time and s’mores. Always s’mores.

We have a fire pit at our apartment and love to toast up some marshmallows to make s’mores on a summer evening while cracking a beer or having a glass of wine. It’s my idea of a perfect summer evening.

While scrolling through Instagram a while back I saw s’more brownies and my mind was blown. As a s’more lover, I had to try to make them myself so that’s what I did! They have a crispy graham cracker crust, fudgy dark chocolate center and topped with a gooey marshmallow that is browned to perfection on top! What more could you want?

If you use a box brownie mix like I did for this recipe, it is so easy! It can be whipped together pretty fast! Just be sure to choose a really good brownie box like Ghirardelli dark chocolate or fudge.

They are sure to be a hit at any gathering! My good friend tested them for me and had the idea of warming them in the microwave and putting a scoop of vanilla ice cream on top…and oh baby, that took them over the edge! Give it a try!

Triple Chocolate S’more Brownies

These triple chocolate s'more brownies will be hard to stay away from! They are moist, chocolatey and delicious and will be gone before you know it!

Ingredients

  • 11 whole graham crackers processed into fine crumbs
  • 5 TBSP butter melted
  • 1 box brownie mix (follow package directions) or try my vegan fudgy brownie recipe!
  • 1 cup chocolate chips
  • 2 1.5 oz bars Hershey' chocolate
  • 12 jumbo marshmallows (or 1 cup mini marshmallows)

Instructions

  1. Preheat your oven to 350 degrees. Line an 8×8 pan with parchment paper and set aside.

  2. Take 11 graham crackers and make into crumbs. Either place them in a food processor and pulse until crumbs, or place in a large zip lock bag and bang with a rolling pin until crumbs are formed. Place the crumbs into a medium sized bowl and add in the melted butter. Mix to combine well. Place the crumbs into the bottom of the lined pan and with the bottom of a measuring cup, or using your fingers, press the crumbs into the bottom of the pan in an even layer. Bake in the preheated oven for 10 minutes.

  3. While the graham cracker crumbs are baking, prepare the brownies. In a large bowl prepare the brownies according to the instructions on a box or use your favorite brownie recipe. Add in the chocolate chips.

  4. Pour half of the brownie mixture on top of the graham cracker crumbs. Break apart the Hershey's chocolate bars into pieces and lay on the top of the brownie mixture. Pour the remaining batter on top and bake according to your box instructions.

  5. Once the brownies are cooked, remove from oven and set aside. Turn your oven onto broil and place 9-12 jumbo marshmallows (depending how many brownies you want) evenly on the top of the brownies (1 marshmallow for each serving). Place in broiler for 1-2 minutes depending on how golden you like yours. Watch them carefully as they can burn quickly! Remove from broiler when done and let cool completely.

  6. Once cooled, cut into equal pieces each with one marshmallow on each and enjoy! They'll be gone before you know it 🙂
