St. Patty’s Day is almost here and it’s time to start baking your Irish Soda Breads! This is a super-fast quick bread that is made with baking soda which helps it rise instead of yeast. I love the tangy flavor the baking soda gives this bread as well. My husband loves this and treasures it as he only gets it once a year!
My mom always baked up about five Irish Soda Breads for our church Women’s Club who sold them after masses during St. Patrick’s Day weekend and I LOVE the recipe that they use, however it isn’t vegan. I’ve adapted it and feel that this is the closest I’m going to get and I am happy with it!
It does use vegan butter (it’s another special occasion, okay? 🙂 ) and instead of buttermilk, we are using plain yogurt- one of my favorite ingredients to bake with! It’s a great substitute for oils and it keeps your baked goods very light and moist.
I add raisins into this bread, but if you’re not a fan you can leave them out. Make sure to dust the raisins with a little bit of flour first as you don’t want them so all sink to the bottom of the batter.
You’ll mix all the dry ingredients in a large bowl, then the wet in a small bowl and after combine to two. Add in the floured raisins and mix just to combine! Pop it in the oven and cook for about 45 minutes and you’re done!
It’s so good when it’s still warm out of the oven with a little extra vegan butter spread on top. Enjoy!
Vegan Irish Soda Bread
- 1 1/2 cups all purpose flour
- 1/4 cup sugar
- 2 tsp baking powder
- 2 tsp baking soda
- 1/2 tsp salt
- 1/4 cup vegan butter softened
- 1- 5.3 oz container plain vegan yogurt I use Kite Hill
- 1 flax egg 1 TBS Ground Flax + 3 TBSP water set aside
- 1/2 cup unsweetened almond milk
- 1/2 cup raisins floured
Mix all the dry ingredients in a large bowl and set aside.
Combine the butter, vegan yogurt, flax egg and almond milk in a medium bowl and mix together. Add to the dry mixture.
Mix until the mixture just comes together and then add in the floured raisins.
Pour and spread evenly into a lightly greased round pan. If you want, sprinkle a little baking soda on top and then bake at 350 degrees for about 45 minutes until the top is golden and the bread is set.
Let cool for about 15 minutes, then cut to serve!
