Ingredients

Blueberry Buckle

  • 3/4 cup sugar
  • 1/4 cup butter softened
  • 1 egg
  • 1/2 cup milk
  • 2 cups all purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 cups blueberries fresh or frozen

Topping

  • 1/2 cup sugar
  • 1/3 cup flour
  • 1/4 cup butter softened
  • 1/2 tsp ground cinnamon

Instructions

Blueberry Buckle

  1. Preheat oven to 375°F. Line pan with parchment paper or grease lightly with butter and set aside. You can use an 8x8 or 9x9 pan for a thicker buckle or a 13x9 for a thinner buckle.

  2. In a stand mixer, cream together the softened butter and sugar together until light and fluffy.

  3. Add in the egg and milk and mix until incorporated. Then add in all the dry ingredients and mix until just combined. Don't over mix. The dough will be thick and sticky.

  4. Fold in the blueberries gently and then pour into prepared pan. Using a spoon or spatula, press it evenly into the pan. If doing it in a 13x9 it will take some time so be patient.

Topping

  1. In the same mixer add in all of the topping ingredients and mix until crumbles of butter form. Some may be bigger and some may still look sandy, that's okay! Add the topping evenly over the batter and bake. In a 13x9 pan you will need to bake for about 35 minutes. In an 8x8 or 9x9, bake for 45-50 minutes. The top should be golden brown and set. Let cool then slice into bars and enjoy!
