Baked Blueberry Oatmeal

Ingredients

  • 2 cups unsweetened almond milk
  • ¼ cup unsweetened apple sauce
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 egg
  • 2 cups old-fashioned rolled oats
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp sea salt
  • ¼ nutmeg
  • cups blueberries fresh or frozen

Instructions

  1. Preheat the oven to 375°F and spray and 8x8 pan with non-stick cooking spray. Set aside.

  2. In a large bowl, add all of the wet ingredients and whisk well to combine. Add the dry on top and stir together until all ingredients are mixed together well. Fold in the blueberries until just combined.

  3. Add the mixture into the prepared pan and bake in preheated oven for 40-45 minutes until it is set, the edges are golden brown and a toothpick comes out clean.

  4. Let cool for about 5-10 minutes and then serve. Will store in fridge for 4-5 days in an airtight container. Reheat in individual slices as needed. Enjoy!
