Vegan Irish Soda Bread

Ingredients

  • 1 1/2 cups all purpose flour
  • 1/4 cup sugar
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup vegan butter softened
  • 1- 5.3 oz container plain vegan yogurt I use Kite Hill
  • 1 flax egg 1 TBS Ground Flax + 3 TBSP water set aside
  • 1/2 cup unsweetened almond milk
  • 1/2 cup raisins floured

Instructions

  1. Mix all the dry ingredients in a large bowl and set aside.

  2. Combine the butter, vegan yogurt, flax egg and almond milk in a medium bowl and mix together. Add to the dry mixture.

  3. Mix until the mixture just comes together and then add in the floured raisins.

  4. Pour and spread evenly into a lightly greased round pan. If you want, sprinkle a little baking soda on top and then bake at 350 degrees for about 45 minutes until the top is golden and the bread is set.

  5. Let cool for about 15 minutes, then cut to serve!
