It’s almost May which means it’s just about time for Cinco de Mayo! I am a huge fan of this holiday as Mexican food is one of my all time favorites. Who doesn’t love a taco smothered in gucamole? Or some oven baked taquitos?? Today though I’m bringing out my inner mixologist to create 4 (I want MORE) margaritas!

So, you may just finish off the pitcher yourself…

You are going to love these margaritas! We’ve got a strawberry margarita, blackberry margarita, pineapple mint margarita and a jalapeƱo lime classic margarita! Margaritas for everyone!

If you don’t like to add in simple syrup, feel free to leave it out and have the fruit be the only sweetener. I find that I need a little extra sweetness though depending on how sweet the fruit was.

Making simple syrup is very easy! Just add in equal parts of sugar (can use granulated sugar or coconut sugar) and water to a small saucepan. Set to a medium heat and bring to a low boil. Swirl the pan around (do not stir!) for about 1 minute or so until all the sugar is dissolved and then set aside to cool. It’s that easy. If you want a video tutorial I love the one All Recipes has. Simple syrup is great for margaritas, homemade lemonade or ice tea and even to keep cakes moist! If you don’t want to make your own there, you can find pre-made ones in the liquor or grocery store!

In all 4 of these (I want MORE) margaritas, I used our favorite tequila- Blue Nectar! The hubs and I have been fans for a while. They have great quality tequila for a good price and use 100% blue agave which I love! Not to mention the bottle is absolutely stunning! I mean, look at that.

Strawberry Margarita

Ingredients

  • 1/2 cup silver tequila
  • 3 TBSP triple sec
  • 2 large lemons juiced
  • 1/4 cup simple syrup
  • 16 oz frozen strawberries

Instructions

  1. Add all ingredients in a high speed blender and blend until smooth! Pour into four glasses and enjoy.

JalapeƱo Lime Margarita

Ingredients

Jalapeno Simple Syrup

  • 1/2 cup sugar
  • 1/2 cup water
  • 1 jalapeno sliced

Jalapeno Lime Margarita

  • 4 oz tequila
  • 2 oz triple sec
  • 1 1/2 oz fresh lime juice (about 2 limes)
  • 1 oz jalapeno lime simple syrup

Instructions

Jalapeno Simple Syrup

  1. Add the sugar, water and sliced jalapeno to a small sauce pan. Bring the mixture to a slow boil and swirl the pan around (don’t stir). Once the mixture reaches a boil, cook for about 1 minute, then remove from heat, strain out the jalapeno and let cool. 

Jalapeno Lime Simple Syrup

  1. Add all the ingredients into a high speed blender and blend until smooth. You can also use a cocktail shaker as well. Pour over ice and enjoy the spicy goodness!

Blackberry Margarita

Ingredients

Blackberry Margarita

  • 1/2 cup tequila
  • 2 TBSP triple sec
  • 1/4 cup lime juice fresh
  • 2 cups blackberry puree *Instructions below
  • 1/4 cup simple syrup
  • 1 cup ice

Blackberry Puree

  • 16 oz bag frozen blackberries
  • 3 cups water

Instructions

Blackberry Margarita

  1. Add all of the ingredients into a high speed blender and blend until smooth! Pour over ice in some fancy glasses and enjoy!

Blackberry Puree

  1. Add the frozen blackberries and water to a high speed blender. Blend until smooth. 

  2. Run the puree through a fine mesh strainer to get all the seeds out. I rinse my strainer through each pass through. It will take you a few times depending on how large your strainer is. Makes 4 cups of blackberry puree. Set aside. 

Pineapple Mint Margarita

  • 1/2 cup gold tequila
  • 1/4 cup triple sec
  • 16 oz frozen pineapple chunks
  • 1/4 cup fresh lime juice
  • 5 mint leaves

Instructions

  1. Add all ingredients into a high speed blender and blend until thick and creamy! Pour into two large glasses and enjoy the fresh mint in these margaritas!

Recipe Notes

*Note-the pineapple is already very sweet so I didn’t have to add simple syrup in for my taste. However, try it and if you like it even sweeter add in a couple tablespoons of simple syrup.Ā
