Pumpkin Spice and Everything Nice!
There is nothing I like more on a fall morning than a pumpkin spice muffin to take on the go. So perfect for those busy mornings as a quick grab and go! These are topped with crunchy pecans and are so soft and moist on the inside, you’ll love them!
We are a huge fan of muffins in this house! However, you can totally make a pumpkin loaf out of this recipe as well. We tried it- and it’s also delicious 🙂
Let’s jump right into the recipe!
Pumpkin Spice Muffins
Ingredients
- 1 3/4 cup flour AP or gluten free
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar
- 2 tsp pumpkin pie spice
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsweetened almond milk
- 1/2 cup oil canola, vegetable or coconut
- 1 cup pure pumpkin puree
- 1 tsp vanilla extract
- 1/4 cup chopped pecans (optional)
Instructions

Start by combining all of the dry ingredients into a large bowl. Mix well to combine.

In a small bowl, whisk the remaining wet ingredients together.

Add the wet to the dry and stir just until combine.

Grease a muffin pan and evenly scoop the batter into the pan. Top with chopped pecans and pop in a 375 degree oven for about 20-25 minutes or until a toothpick comes out clean.
And there you have it! Easy pumpkin spice muffins that will have you in pumpkin heaven. The pecans give the muffins a nice texture and crunch but feel free to leave it out if you not a nut fan. Topping them with a glaze or cinnamon topping would also be devine!
