Who loves tacos??!
I sure do. Tacos were probably my favorite food before I went vegan. I loved the flavored ground beef, shredded cheese and all the extra fixings on top! Once I went vegan I really struggled to figure out how to make a taco I would love and appreciate so much. Rice and beans weren’t doing it for me. I even tried fake ground beef from Lightlife.. it was good, but I didn’t like that it was so processed and not a whole food. That’s when I turned to cauliflower.
Cauliflower is so great for so many dishes! Cauliflower wings, cauliflower potatoes, tots, roasted cauliflower chicken, the list goes on. I was truly excited to make cauliflower tacos though and hoped that it would cure the craving I’ve been having. I saved myself the trouble of processing the cauliflower and bought it pre “riced” from Trader Joe’s. The package is 16oz, I would say it is a whole small head of cauliflower or half a large head if you are to process it yourself.
Add some chopped onion and garlic in a large skillet with some water and cook them down for about 3-5 minutes until soft. Then add in all of your riced cauliflower and stir together. Add in about ¼ – ½ cup of water to steam the cauliflower so it gets soft. Test the cauliflower to make sure the texture is to your liking. Then add in 3½ TBS of taco seasoning (make sure it’s vegan). Feel free to add I more if you like it extra spicy!!
Continue cooking the cauliflower “meat” until it all comes together and tastes exactly how you want it! Chop up any toppings you want. In mine I used black beans, tomatoes, spinach and avocado. Feel free to put whatever you’d like on it! Add the meat and toppings into a tortilla or hard shell and there you go! Awesome tacos that give me the beefy texture I used to love, but so much healthier for you. Enjoy!
1 small white onion- chopped
2 garlic cloves- minced
1-16oz package of riced cauliflower (or process a small head of cauliflower yourself)
3½ TBS taco seasoning
Anything else your taste buds desire 🙂
