Sunday morning. Sleeping in, staying in pajamas until whenever you want and taking it easy. I love Sunday’s. There is something truly special about them. I love waking up and knowing I just get to relax toady. If it’s football season, even better. My husband and I will either go to a local bar or just cozy up on the couch to watch the game. What we truly adore about Sunday’s though are breakfast. Sunday’s allow more time to cook a delicious breakfast instead of a quick bowl of cereal or a piece of fruit like most of my breakfasts.

Let’s be honest though, there are some Sunday’s when I don’t feel like cooking for 2 hours in the morning, so that’s when I turn to my Insanely Easy Vegan Pancakes. These pancakes are a staple in my house and we have them at least once a month. The reason they are so easy is because I use store bought pancake mix and just doctor them up a bit to make them my own!

There are a lot of great store bought pancake mixes out there but I’ve always grown up with Bisquick and just love the taste of it. Not all mixes are vegan though, so make sure you look at the label and read the ingredients. Bisquick only has a about 6 ingredients and it makes really nice light and fluffy pancakes which I love. I use the Heart Smart kind because it just has some better ingredients than the original. It does still contain an ingredient called DATEM which is a type of emulsifier found in breads and there have been numerous studies done on it. FDA says it’s safe, but others disagree. I’ve been on the hunt for a new mix so if you have any suggestions, please leave them in the comments to your favorites!

I just follow the directions on the box but instead of using an egg, I just a flax egg or Neat Egg and instead of regular cow’s milk (who wants that!) I use whatever plant based milk I have on hand, usually almond. You can keep it as simple as that or add in some more ingredients to really customize the pancakes.

I love to add in cinnamon and apple pie spice to my pancakes. If you want a heartier pancake, I love to add in some oats or wheat germ like my dad used to add. They add a nice texture to the pancake. This is your chance to get creative and make a custom pancake for you! Adding in some fruit or chocolate chips are always fun too! Kids love them!

Insanely Easy Vegan Pancakes

Ingredients

  • 2 cups Heart Smart Bisquick Mix
  • 1 1/4 cups plant based milk like almond
  • 1 flax egg 1 TBSP Ground Flax + 3 TBSP Water

Instructions

  1. Start your flax or Neat Egg in a small bowl and let it set up.

  2. Get a large non-stick skillet or griddle and turn the heat to a medium high to preheat.

  3. In a medium bowl, combine the Bisquick, milk and set flax egg and mix to combine.

  4. If you are adding in extras, now is the time. Try some cinnamon, vanilla, or even chocolate chips or fruit! The combinations are endless- use your creativity!

  5. Add some vegan butter or cooking spray to the skillet and then pour your batter in, about 1/4 cup at a time for each pancake.

  6. Let it start to cook and when you see bubbles form on the top of the pancake, it is time to flip. (Should be about 2-3 minutes)

  7. Flip the pancakes over and let them continue to cook for another 2-3 minutes on the other side. Plate them up and serve with some warm maple syrup while hot!
