Do you know how hard it is to find rhubarb in North Carolina right now? SO HARD! Last weekend my family and I went strawberry picking at a local farm and all my husband wanted was a strawberry rhubarb pie. My mom called every grocery store within a 20 mile radius and none of them had any. We FINALLY got a hold of store that had some in and went right over to pick it up.

So after I made the pie, what else to do with rhubarb? I’m definitely going to be trying it in a buckle recipe, make some jam and why not infuse it in some simple syrup for a margarita!

I love a good margarita. Last year, I made 4 (I want MORE) Margaritas using my favorite tequila, Blue Nectar. It’s so smooth and 100% agave which I love. Highly recommend it!

Once you make the rhubarb infused simple syrup, it will keep in the fridge for a while so you can make plenty of these drinks! Give it try in other drinks as well!

Rhubarb Margarita

Ingredients

Rhubarb Margarita

  • 2 oz tequila
  • 1 oz triple sec
  • 1 oz fresh lime juice
  • 1 oz rhubarb infused simple syrup recipe follows
  • 4 mint leaves

Rhubarb Infused Simple Syrup

  • 1 cup sugar
  • 1 cup water
  • 1 cup rhubarb chopped
  • 10 mint leaves

Instructions

Rhubarb Margarita

  1. Add the mint leaves and lime juice into a cocktail shaker and muddle the mint well to release the oils. Add the remaining ingredients: tequila, triple sec, and rhubarb syrup along with 1/2 cup of ice. Shake well and pour into a glass as is or over ice.

  2. *If you like it sweeter, add another ½ oz of simple syrup.

Rhubarb Infused Simple Syrup

  1. Add the sugar, water and chopped rhubarb into a small saucepan. Place over medium heat and let cook for 5-10 minutes until sugar is dissolved and rhubarb becomes soft. Shut off heat and add in the mint leaves. Let steep for another 5 minutes.

  2. Strain the mixture and place in the fridge to cool.
