It’s Girl Scout Cookie Season Ya’ll!! One of the best times of the year! I used to be a girl scout when I was younger and loved it. My mom was my troop leader, I had some great friends in the troop and always enjoyed going around to the neighbors to sell some cookies.

Growing up my taste buds have changed and the three cookies I ALWAYS order now are Samoas, Tagalongs and Thin Mints. I never liked Thin Mints growing up, but I’ll tell you now.. I absolutely love the combination of mint and chocolate.

Now let’s get to these brownies. I’ll admit, this isn’t a real recipe. It’s totally a cheat recipe but I’m fine with that. You just need a box of your favorite brownie mix (Mine is Gharadelli Dark Chocolate Brownie Mix), what is required of the mix- problem eggs, water and oil and a sleeve of Thin Mint Cookies. That’s it.

Of course, you can totally use your favorite brownie recipe instead of a box. It will all work just fine. Give my vegan fudgy brownie recipe a try if you’d like! They are super fudgy and delicious!

Start by putting the whole sleeve of Thin Mint cookies into a Ziploc bag and crush them up with a rolling pin. Don’t make them too fine, you don’t want crumbs, just pieces of the cookie. Once they are crushed up, set aside.

Prepare your brownie pan (I always use an 8×8 for a nice thick brownie) and set aside. Also preheat your oven to what the brownie box tells you. It will probably be 325-350 depending on the brand you choose. Then in an large bowl, make your brownies according to the package instructions and mix the batter until smooth. Pour in ¾ of your cookie pieces and stir gently into the batter.

Pour the batter into the prepared pan and top the batter with the rest of the cookie pieces. Bake according to the package directions, mine was about 50 minutes. The house will smell amazing! When done, take out of the oven and let them cool completely… I know it will be hard, but it’s worth it!

Cut, serve and store. Hopefully they last longer than mine did! I brought them to work for my coworkers and they were gone in a few minutes! So again, I know this isn’t a real recipe, it’s totally a cheat, but it’s so delicious and so worth it. If you love thin mint cookies, these are for you! Enjoy!

Thin Mint Brownies

Ingredients

  • 1 20 oz box Dark Chocolate Brownie Mix
  • 1 egg
  • 1/2 cup vegetable oil
  • 1/4 cup water
  • 1 sleeve Girl Scout Thin Mint Cookies crushed into pieces

Instructions

  1. Preheat the oven to 325° and line an 8×8 inch baking pan with parchment paper and set aside.

  2. In a large bowl, mix together your brownie mix, egg, water and oil until well combined. Add in 3/4 of the crushed Thin Mint cookies and mix. Pour mixture into the prepared pan and spread the batter out evenly. Top the brownie mix with the remaining cookie pieces.

  3. Bake in oven for about 40-45 minutes or until the brownies are set and a toothpick comes out clean. Let cool completely then enjoy!
